I never thought I would read about egg whites and absinthe in the same sentence...let alone in the same drink. I found this interesting recipe for the Morning Glory Fizz in the Washington Post. Apparently, it's a great "pick me up"for the morning after.
Recipe (2 servings)
INGREDIENTS:
1 1/2 oz freshly squeezed lemon juice
1 oz freshly squeezed lime juice
1/2 oz simple syrup
1 large egg white
1/2 oz absinthe
3 oz scotch or rye whiskey
Ice
DIRECTIONS:
Combine the lemon and lime juices, simple syrup, egg white, absinthe and scotch or rye whiskey in a cocktail shaker. Shake well, then add the ice and shake until fully chilled. Strain into chilled martini glass.
NOTES:
To make simple syrup, 1/2 cup of sugar and 1/2 cup of water in saucepan over medium heat, stirring until the sugar dissolves. bring to a slow rolling boil, then reduce to medium- low for 5 minutes. Transfer to heat proof container.
The recipe does require a little more effort than your average cocktail recipe, but it sounds like something interesting to try on a Sunday morning!
